What I do is make wraps using Boca "chicken" nuggets ( http://the-dairy-free-diva-recipe-exchange.yumsugar.com/Boca-Chicken-Wraps-7458640 ) and add some cucumber, tomato, lettuce. Add some sunflower seeds for added protein. Also, Smart Deli brand lunch "meats" have a good amount of protein as well so between the carbs in the bread and protein, it's a good combo before/after a workout.

I like to eat a bit lighter in the summer. I'll definitely try a few of these recipes. My question is what to eat after the gym especially on strength training days. If this has been covered before please point me to that post also. Cheers!

To Anonymous post about the Bible saying we are supposed to eat meat... Keep in mind that when God first created this world, we were innocent and free of sin. Adam and Eve, as taught in the Bible, were not created as carnivorous beings. In fact, according to the Bible, man was created before animals even existed! They ate from the EARTH, not from the other animals. They were simply meant to reign over the other animals. There was no killing of any kind, human or other animal, until Adam and Eve sinned and God told them they would have to work hard to make their food grow out of the ground. THAT is when man began to kill animals and eat meat... So who can say that it is unbiblical to choose not to eat meat?I do agree that, yes, some of the vegetarian products on the market now have so many preservatives and additives, that they are unhealthy. That can go for any product that isn't made fresh. It has nothing to do with the fact that they don't contain meat. Although I do agree about those certain products being unhealthy, your condescending attitude about vegetarianism is not well-representative of Christ my Savior, and frankly, you just need to get your facts straight.

I may not be a vegetarian (in fact I rather like certain kinds of meat), these sounds like they could be really good. I like eating more veggie meals during warmer months, because like someone else said, cooking meat over a hot stove trying to get it done sucks in the summer lol. Plus, veggies can be really tasty!

There is no one more environmentally responsible than American farmers and ranchers. To say that by not eating meat, you are reducing your carbon footprint is false. Today's cattlemen provide more people with a safe, affordable and healthy product using less natural resources than ever before. Thanks to smart food production practices, livestock raising in the United States accounts for less than 3 percent of the country’s total greenhouse gas emissions. Raising cattle is just a portion of that number. And we are continuing to lower that number every day. My great-grandparents, grandparents and my parents all raised cattle on our family's ranch. Our family walks the same land, breathes the same air and drinks the same water as your family. We take our commitment to protecting and preserving these natural resources very seriously. If you really want to celebrate Earth Day, go out and have yourself some wholesome beef and know that you are supporting the men and women who have worked to protect our environment for generations.

I've been doing the meatless Mondays and it's great! But these recipes all seem a little...strange. Like they're trying too hard to be gourmet vegetarian recipes. I don't think I'll be trying any of them.

I appreciate this because during the summer months, I don't like slaving over a hot stove and I like my meat well done. True I have AC but I don't want a huge bill this summer.

I know God meant for you to eat meat; otherwise he wouldn't have said said it in the Bible. He's very specific in that all that he created is for you to enjoy. Carbon footprint? -whoever created that has an agenda and fools alot of people. Humans are built to consume meat; our bodies cannot survive a "healthy" long life without it...biologist have proven that. Don't be fooled even the "healthiest" vegetarian food items sold out there are full of preservatives, chemicals, and other risks. Before you write, I suggest you consider it "affects" people therefore, research the truth first before you share your thoughts. Consider you may have incorrect information based on your belief, culture and feelings.
