This week's reader recipe comes from TeamSugar member LaylaCams. The recipe was actually submitted by LisaK and is a twist on a regular chicken casserole. The twist? A layer of crushed Doritos. That's right, Doritos. I really don't think I need to say much more! To get the recipe, read more.
Doritos Chicken Casserole

I made LisaK's Chicken Casserole for dinner tonight.
1 whole chicken (lv) or 1 package of boneless skinless breasts or chicken tenders (sv) I usually buy a 3 pack of breasts.
1 can of Rotel
1 or 2 cans of Cream of Chicken Mushroom soup (I used 2, hers called for 1)
1 small onion
1 bell pepper
1 32-oz. carton of Swanson Natural Goodness 33 percent lower sodium chicken broth (only needed for the sv) or 3-4 cups of chicken broth from where you boiled the whole chicken (lv)
1 bag of Doritos — the corn flavor in the yellow bag
1 cup of shredded cheddar cheese (or more depending on how cheesy you want it)
*I used the Nacho Cheese Doritos*
Boil your chicken until done. If your using a whole chicken, season water with celery, carrots, salt, etc to make a broth.
Set chicken aside and let cool. Chop up bell pepper and onion and saute in a pan for about 5 minutes.
Add chicken broth, soup and rotel and heat until soup is melted.
In a 9-x-13 baking dish, spray with nonstick coating. Pour half the bag of Doritos into the pan and crush. Depending on how thick you want the crust, you can add more or less.
I used my love Pampered Chef casserole dish, not a 19-x-13 in.
Tear up chicken and cover the Doritos. Pour sauce over mixture, cover with foil and bake for 20 minutes. Remove foil and cover with grated cheese. Bake for 10 more minutes.
If you are using the can broth, always use the lower sodium otherwise it is too salty.
The soup and chicken broth mixture is going to be VERY thin. Don't fret, once you bake it, it will thicken up and the Doritos will absorb some of it

I like Doritos as much as the next person, but this looks entirely unappetizing to me. Yuck.
1Correct me if I'm wrong, but I was under the impression that this site was a resource for people who loved the culinary arts and wanted to become more knowledgeable on said subject. I don't believe that a recipe for Doritos Casserole is doing much to advance anyone's palate. (Not to mention its severely lacking in nutritional value, the amount of sodium in this dish is through the roof!)
2i had a VERY bad experience with doritos in college so now i'm afraid of anything that uses them. i'll have to pass on that recipe - but it's great creativity

4i wouldnt do it with doritos, but other chips yes! i am currently in love with these corn ones with flax seeds from whole foods.....if you want it more healthy im sure you can think of a bunch of ways to mix it up. i like this idea ^__^
5hey i wouldnt kill the idea yet for all of you saying nay to doritos, they actually taste amazing on other foods

7oh man....doritos on ham and turkey...now THAT sounds dangerous. hahaha. and im not even a major fan of doritos ^___^ and im a dork...i just realized that there are other flavors other than nacho cheese!
8I wouldnt knock it folks. Some pretty famous restaurants use items like fritos in their ingredients. Its all about creativity.

19my grandmother makes something very similar, but with torn up tortillas instead of doritos... but I'm a fan of the doritos!

21i'm open to a lot of things, but i'm a little reluctant.
22In Texas (and Oklahoma), it's called King Ranch Chicken Casserole. Use corn tortillas instead, healthy soups, lf cheese, and beef it up with sauteed onions and peppers, and it's healthy AND delicious.
23When I was a kid I was staying with my cousins in Oklahoma and someone brought this to a potluck. I loved it and have been wondering what it was ever since. I've never seen it anywhere else until now. Thanks!! I can't wait to try it. I wonder if it's as good as I remember.

26yum! i make something very similar to this except that i make it with a layer of velveeta and a mixture of cream of chicken soup, cream of mushroom and creamed corn. all of the soups get mixed together and then you layer chicken, soup mixture and then cut up velveeta (crushed doritos on top). amazing! we call it Rojo Chicken.
