OK so hopefully by now you know how this works, but just in case, here goes. You are at home and hungry for food. You have to cook up something scrumptious for you and your boyfriend/girlfriend/ spouse/child/friend, but the ingredients you have on hand are limited.
You have ground turkey, feta cheese, and a jar of roasted red peppers. Using these products, along with whatever you currently have on hand in your cupboard and refrigerator, what would you make?

- First I would heat up some olive oil in a saute pan. I would brown the ground turkey in the oil.
- To the pan I would add a chopped onion and minced garlic.
- I would mix in some dried spices: black pepper, salt, oregano, and thyme.
- When the meat is almost cooked and the vegetables are soft I would mix in some chopped red peppers.
- Meanwhile, I would cover a cookie sheet with foil. On top of it I would lay out a bunch of pita chips.
- I would top the pita chips with the cooked ground turkey vegetable mixture. Next I would top this with the feta cheese.
- I would put the whole thing in the oven and bake until the cheese is melted and the pitas are crispy and brown.
- Finally, I would top the entire thing with fresh chopped parsley.
- Voila, Greek nachos! Best paired with a cold beer.

oh my god, that sounds sooo good.
i was thinking turkey burgers on whole wheat buns with red peppers and feta cheese.
1I'd make spicy, curried turkey and veggie samosas with dipping sauces -- one cooling, feta, yogurt, and grated cucumber and one savory, roasted red pepper and mayo.
2I like the idea of burgers or tacos.
3easy,peasy meatballs with onions and garlic within. Then make a pta sandwhich with them which contains the pepper, lettuce, and feta with some home made yogurt cucumber sauce.
4Wow, everyone is so creative! I'm boring--I would just sautee some onions and garlic and puree with the red peppers for a pasta sauce served over whole wheat penne with browned ground turkey topped with feta cheese.
5I was going to say I'd make stuffed turkey burgers (stuffed with the red peppers and feta)and I would use whole wheat pita instead of burger buns. However, your recipe sounds so much more yummy!! I think I will have to try it now!
6I think I'd make some kind of casserole.
I'd slightly saute onions and garlic.
In a bowl, season the ground turkey with some salt, pepper, a dash of dry mustard, paprika and cumin. Toss in the sauted onions and garlic.
In a casserole dish, put a layer of the turkey mixture. Then add a layer mixed with peppers and some feta cheese. Add a layer of the turkey mixture and finish with a layer of the peppers and cheese on top.
Cook covered at 400 for approximately 45 minutes or, lightly browned and bubbling.
I'd serve this with a green salad and some brown rice. Bon appetit!
7I would make stuffed red peppers with turkey, onions, peas and carrots in a light tomato sauce and use the feta cheese as a topping/garnish.
Serve with red mexican rice and maybe refried beans.
8like a cheesy meaty sauce with red peppers served with some spaghetti.
9Roasted pepper turkey mini meatballs and bake it with ziti and sprinkle some feta while the ziti is still hot.
10Im all about the wrap! Roasted Red Peppers + feta + food processor = outstanding spread!!
11i'd make greek "fajita" night
i'd cook the turkey w/ some onion/garlic/S&P
chop up the roasted peppers put them in a bowl
make some fresh hummus (chickpeas, tahini, lemon juice)
serve along salad w/ kalamata olives, evoo, balsamic and oregano
and heat up some wraps and everyone can assemble their own greek "fajitas"
12i forgot the cheese, that would be sprinkled on top of the salad and in a bowl for the wraps!
13I'd make some meatballs, probably.
14stuffed peppers! sautee the ground turkey with mushrooms, onions, garlic and oregano. add the roasted peppers and stuff into bell peppers, top with feta and bake!
15Stuff the turkey with the cheese and make burgers. Top with peppers.
16Fun timing! I actually had turkey burgers for dinner last night. I mixed feta cheese and an olive tapenade into the burgers and had those on buns with arugula and a yogurt/mustard spread. If I had the red peppers on hand, I would've topped with those.
Although, now I wish I had more, I would definitely give those greek nachos a try!
17greek turkey burgers! mix the feta in with the ground turkey, add oregano,salt and pepper and a tsp of minced garlic. Yum! Put in a warmed pita with the roasted red peppers, romaine lettuce, and a little cucumber sauce. yummy making me hungry!
18I'm going with the stuffed turkey burgers that someone suggested...those are the best. You can't go wrong with feta and roasted red peppers. Yum.
