I'm not really sure why Easter is associated with eggs, but eggs — in all their delicious forms — are consumed in excess around this time of year. To fully appreciate eggs in all their glory it's nice to have some egg accessories: poacher, slicer, molds, cups, etc. Let's head off to market in search of all things egg. 1Eggs were originally associated with the pre-Christian spring fertility festivals, when the people - especially the peasants in rural areas - were throwing celebrations welcoming the Earth back to life and asking the Gods and Goddesses for good growing season and fruitful harvest.
When the early Christian Church wanted to get the people to give up their old Pagan ways and become Christian, one of the things they did was try to time their festivals to the times when the people were already used to having celebrations. So the Winter Solstice - a time the Pagans saw as the rebirth of the Sun (because the days started to get longer again,) they celebrated Christmas - the birth of the Son. Likewise, Spring was a time of seeing life return to the Earth that had been barren all winter, so the Christians chose that time of year to celebrate Christ's resurrection.
Because the Church was essentially trying to ease people into the transition from the only Pagan ways to the new Christian ones, along with timing their celebrations to match the Earth and Sun festivals, they also adopted a lot of the symbolism from the Pagan celebrations to give these new festivals a "familiar" feel. Ergo, we have Christmas Trees, Yule Logs and Mistletoe - all of which came from the Pagan traditions - and we have Eggs and Bunny Rabbits for Easter.
2Still strange how the Christian churches cannot sync up their celebrations of Easter.
