I think it's safe to say that most people would not turn down a creamy slice of sweet cheesecake. However, the more out of the ordinary savory cheesecake is a much harder sell.
I would jump at the chance to eat Nemmie's savory stilton and bacon cheesecake, but know many of you find blue cheese — no matter what form — unappetizing. The blue cheese is mixed with cream cheese and topped with bacon, so the pungent flavor is most likely be toned down.
Knowing that, would you eat this?

35Just made these from the original Saveur site. They are marvelous. Used cookie cutter from Fantes supply. Cheaper than buying the muffin tins or molds. Each cookie cutter was $1.79. There are a few tricks to making this. If anyone is interested, I'll share what I learned. To answer one commenter-no, they are not salty. The base or crust is graham crackers which , along with the cream cheese, tames the sharpness of the blue cheese. Would definitely not recomment using a cheaper or lesser quality blue-would completely ruin this wonderful appetizer.
