Here's the scenario: you are at home and hungry. You have to cook up something scrumptious for you and your boyfriend/girlfriend/ spouse/child/friend, but the ingredients you have on hand are limited.
You have a package of pita, a can of garbanzo beans, and black olives. Using these products, along with whatever you currently have on hand in your cupboard and refrigerator, what would you make?

- To eat more salads this week I purchased a huge container of mixed greens. I will start by cutting the pita into 1 inch pieces. I will toss these with olive oil, salt, pepper, and roasted red pepper flakes. I will place the pita croutons on a baking sheet and bake in the oven for 15 minutes or until crisp and crunchy.
- Meanwhile, I'll prep the salad. In a big bowl I'll combine greens, rinsed garbanzo beans, and chopped black olives. To this I will add a couple of things I know I have in the fridge — green onions and sun dried tomatoes.
- I will make a simple red wine vinegar flavored with a little bit of mustard and toss the salad to coat.
- I'll add the pita croutons and enjoy the salad with a chilled glass of the white wine I purchased yesterday: dry Riesling!

The obvious here is hummus, but cmon that is boring!
I would make some curry:
1 chopped onion
1 chopped tomato
1 can chick peas
1 tsp ginger
½ tsp red chili powder
1 tsp coriander powder
½ tsp cumin powder
½ tsp garam masala
½ tsp dried mango powder (amchoor)
¼ tsp turmeric powder
1 tbsp lemon juice
1 tsp cumin
olive oil
1 cup water
OR 2tbs red curry paste, to taste
Black Olives
Method: Add cumin seeds to hot oil and allow to crackle. Add onion and fry till lightly browned.
Add spices and fry for a minute.
Snack on the blakc olives while cooking. You know you can't resist!
Add chopped tomatoes and cook till tomatoes pulp. Add chickpeas and a cup of water and cover cook for 10-12 minutes.
Stir in lemon juice and sprinkle garam masala and coriander as garnish. Serve with pita
1I'd add some fresh veggies, like red pepper, onion, and asparagus to the beans and make a dip. Then I'd toast the pitas and use them as chips!

2I would make pita pockets.
3cut the pita bread in half and stuff it with the chick peas, olives, shredded cabbage, red peppers, onions and some tuna.
viola! simple, delicious annnnnd healthy.
Yeah, I thought hummus too. Toast the pitas to make chips, make hummus and a salad with the olives, some sundried tomatoes, feta cheese. Mmm.
Or, you could take the chickpeas, chop the olives and mix them with some olive oil, frech lemon juice, salt, pepper, maybe some more sun-dried tomatoes (just cause I love them), some feta cheese, maybe some spinach and put them in the pitas. Oooo, I have some harissa I made a while back still in the fridge, maybe mix in a bit of that and some tahini. Ok, I'm hungry now. Good thing I have chickpeas and black olives in my pantry at home.
There are so many possibilites with this combination, a good soup, just take some broth, the chickpeas, maybe some kind of green like spinach or chard, a can of tomatoes, some garlic and onion, salt, pepper. Make some tapenade with the olives and spread it on the pitas.
4Well, I just finished taking the sandwich poll and am on record that I'm not a fan, so I'm challenged by the pita pockets here.
I'd toss the chick peas in olive oil and some salt then roast them in a high oven for about 15 minutes.
While the chick peas cook, I'd cut up and saute chicken breasts with a bit of salt, a dash of soy sauce for flavor. Wash a head of lettuce.
Then I'd open those pitas up, put some lettuce on top of them, some chicken, tomatoe and olives, then put a dash of Ranch Dressing on top and have the roasted chick peas on the side.
5I know it's obvious, but hummus! (I make a killer shallot and roasted garlic version!) I'd slap the hummus in a pita along with the olives (sliced) as well as baby spinach, tomatoes, red onions and bell pepper slices. Num!
6yeah, I'd go for obvious and make pita chips with sea salt, and black bean hummus.
7I agree with the curry - fry some onions and mustard and cumin seeds, cook the beans with a can of tomato sauce, and a few minutes before the end add the sliced olives. Serve with rice and eat with the pita breads.
8i would make hummus for sure
9i would spread it at the bottem of a bowl and serve a greek salad on top
