What's in Season: Asparagus

Last week I had my first asparagus of the season! I was surprised to see it in the local supermarket and couldn't resist serving it at an impromptu dinner party.   • Asparagus is most abundant between March and July.
  • There are three types of asparagus: green, white, and purple. Green is the most common and white is covered with soil — grown in the dark — to keep it from turning green.
  • At the store look for crisp stalks with firm brightly colored heads. Stay away from soft, limp-looking asparagus. Also flowers are a sign of age, so avoid stalks with flowers.
  • Fat stalks tend to be more flavorful and less stringy than thin stalks.
  • After purchasing, keep asparagus chilled until time to cook. If left at room temperature the stalks become tough and stringy and can lose their flavor quickly.
  • A serving size of asparagus is about eight stalks.
  • Choose stalks of similar size so they will cook evenly.

    i've personally always steamed/blanched it and i love it - but now i might have to try griling it since you've made the recommendation. i LOVE asparagus and i'm looking forward to it being in season, less expensive and more flavorful.

    asparagus is one of the few veggies i actually like! ilanac- grilled asparagus is great- drizzle some olive oil on it and sprinkle some salt and pepper on it and throw it on the grill til it leaves those nice grill marks- yum!!

    Asparagus is so amazing. i try to buy some every week. i often bake it in the oven with oil, salt and pepper. Mmmm so good. or in a pasta salad with cherry tomatoes...

    Lately I love to grill asparagus with a touch of olive oil, serve it topped with shavings of parmesan cheese.

    I've been serving asparagus 3 times a week lately. The price is right and it's always soooo good. I usually put it in a bowl with the stems in water in the fridge and have found they stay fresher longer that way. I got the idea from the stores, since they usually have them in water.

    oh! I knew that asparagus was a spring veggie but I didn't realize they went into season as early as march! I'm so excited. Asparagus is my FAVORITE veggie!

    I love broiling them with olive oil, they get a little crispy and almost sweet.
