Here's the scenario: you are at home and hungry. You have to cook up something scrumptious for you and your boyfriend/girlfriend/ spouse/child/friend, but have limited ingredients on hand.
You have potatoes, green onions, and olive oil. Using these products, along with whatever you currently have on hand in your cupboard and refrigerator, what would you make?
To see what I would make, read more.
- I would start by slicing up an onion and a couple of cloves of garlic. I would peel the potatoes and slice into super thin disks.
- I would heat the olive oil in the largest saute pan I own. Once hot, I would add the onions and garlic and saute over medium low heat until the onions are soft, about 10 minutes.
- Next I would add the potatoes and cook until the potatoes are soft, brown, and just starting to crisp.
- Meanwhile, I would beat several eggs in a small bowl. I would season these eggs with salt and pepper and add the mixture to the potatoes and onions.
- I would chop the green onions and scatter over the top of the egg potato mixture.
- I would cook until the surface is still runny, than transfer the pan to the broiler until the top is browned and the egg is cooked through.
- I would slice into wedges and enjoy the tortilla española!

1I'd make stuffed baked potatoes! Rub the potato with the oil, pop it in the oven, top it with shredded cheese, sour cream, and the chopped green onion.
2I would cut up the potatoes in tiny cubes.
My frying pan would be heated on the stove already with the OLIVE OIL.
Throw the potatoes in the heated pan and satay them.
Season the with Lemon/dill, sea salt, black pepper, onion and garlic powder.
Once the potatoes have browned, take them out and garnish with the green onions.
3Pomme frittes sprinkled with chives.
4home fries with green onions

9Warm salad: boiling the potatoes, cutting them in big cubes. Add a few chopped chives, and sweet mayonnaise with a bit of olive oil. It's a delicious combination!
10My favorite treat is roasted potatoes so a simple 45 min bake till crispy and chop the green onions on top. this seems to be the top choice for everyone here so far but i say why mess with perfection?
11Reminds me of Champ!
(Irish dish) Mash potatos with spring onions... id add oil instead of butter..season with pepper and salt and id eat it pain!
12I would slice the chives and cut the potatoes into wedges and put it all into a piece of foil, drizzle it with olive oil, sprinkle with some salt, pepper and a squeeze of lemon and throw the whole packet onto the girl until the bottom of the potatoes begin to caramelize a little. And while that is cooking, throw some chicken breasts and legs on the girl basted with barbecue sauce.
13Loaded baked potato!
14I'd throw some boneless, skinless chicken in a skillet with the olive oil and once that was done cooking-add a cup or black beans and a sprinkle of cheese. Bake the potato, slice it down the middle and fill the center with the chicken mix. Top with sour cream and the chives and eat up!
Try this one with green peppers instead of onions!
This recipe is famosus in Spain and we take cold or warm, with bread or with tomato sauce. No one do the same recipe and it's always delicious!
