For some reason I have pineapple on the brain. I absolutely love it and eat it all the time. So today I went hunting for a pineapple treat to try later.
In my searching, I stumbled across this one claiming to make a perfect pineapple cake in less than 10 minutes. Granted, you'd have to use the microwave and would need a microwave safe bundt pan (silicone would work). Personally I think it sounds a little too good to be true, seems like you might as well put it in the oven for twice the time... Unfortunately, I can't actually test this one out because, believe it or not, I don't actually have a microwave (SF kitchen = tiny no counter space). However it seems like you would end up with a pretty standard pineapple upside down cake. So, if you've got a microwave, and need dessert in less than 10 minutes, why don't you give this 9 Minute Microwave Pineapple Cake a try? Then once you've tested it out, let us all know how the outcome was! For the recipe, read more
9 Minute Microwave Pineapple Cake
From astray
6 ounce sliced pineapple
1/2 cup brown sugar
5 tsp butter
6 maraschino cherries
1/2 box white cake mix
1 egg
Using a bundt microwave pan, spray with non stick vegetable spray. Melt butter and pour into bunt pan. Spread brown sugar in bottom of pan on butter. Place pineapple slices around on top of brown sugar. Save the juice. Slice the cherries and place in and around the pineapple slices. Mix pineapple juice and one egg in the half of boxed cake mix. Pour over pineapple slices, cherries and brown sugar. Bake in microwave on high for 9 minutes on turn table. If you don't have a turn table, turn 1/4 turn every 3 minutes.

I live in SF and have a microwave. If you bring the pan, you can use my microwave, and we'll share the results!
1I think I 'll try it, but with butter cake mix instead of white.

2cool.
3I can have cake in 10 minutes?!? It's only my favorite food, so I'm totally all over this.
4i'd try this, but only if i can find the pan. mine's metal and aint microwave safe!
5I got one of these silicone pans for Christmas and it's in the shape of a rose - which looks really nice, but only for cakes that don't need frosting which is like 0.01% of all cakes. I think this would work though!
6
at 0.01% LOL!
7This looks good. I would love to know if it worked for someone.
8mandiesoh, can you tell i'm a bio major? ha ha
9Wow...this is the ultimate lazy recipe. It only takes about 10 minutes to put together a cake from scratch, instead of using a disgusting, artifically-flavored box mix. Then you can pop it in the oven, and set the oven timer and not have to worry about it for about 45 minutes.
10i don't know...cake "baked" in a microwave just doesn't sound very appetizing.
11My sister hosted a pampered chef party and the rep. made a pumpkin spice cake in the microwave, I think it took like 20 minutes though, she was demonstrating some kind of stoneware pan they were selling. It tasted okay, it was a little spongy. Puddinpie, I would have to say that 90% of the people I know that eat cake (myself included) prefer cake mix cakes over made from scratch cakes. I know that is suppposedly sacreligious to the cake Gods, but it's the truth. The cake mixes have ingredients that you cannot simply just add "1 tablespoon" to made from scratch cakes that help to stabilize the consistency and moistness of the cake. Those "special" ingredients probably cause cancer, but boy they make that cake mix cake taste darn good!!

Cheese It!!
^I disagree--while I know that most pastry chefs complain that some of their customers WANT cake mix cakes, it is because these customers are familiar with the artificial, too sweet taste. It is kind of a product of the typical American diet...their palates become dulled by eating heavily processed foods. Box cake mixes, in my opinion, are horrible--there is no structure, the crumb of the cake just dissolves on your tongue. The flavour and aroma is also so artificial.
I don't think there is any comparison between a from-scratch cake, and a cake mix cake. I suspect people who prefer cake mix cakes have only had poorly made from-scratch cakes...god knows there's a lot of them out there! It is puzzling to me, anyway, since I cook/bake professionally, but to each his/her own!

that explains everything mississippigirl! LOL!
14puddinpie, i dont like cake mix stuff too. when its cookies they still taste fine (prolly cos of all the chocs i throw in?? lol) but when you make stuff like muffins or cakes w/ mixes, it just tastes artificial! lol. dont know why!
15^Read the ingredient list on those box mixes and you'll know why!!
16ahahaha..i quit using those 3 yrs ago. i love baking from scratch cos baking & cooking has a calming effect on me. its like therapy!
the only mix i still use occassionally are the betty crocker fudge brownies. those arent half bad.
17Yes, baking and cooking has a calming effect on me too...and nothing beats the smell of brioche or apple pie baking in your oven! Yummm....
18i know! sometimes i think its the anticipation of eating something gorgeously buttery that gets me all hyped up. LOL
