Tagine
A Moroccan stew containing meat or poultry that is gently simmered with vegetables, olives, garlic, preserved lemons and spices (ginger, pepper, saffron, cumin, etc.). It is named after the traditional conical shaped dish that it is cooked in.
Oh, and I should mention, they're terribly delicious.

Fascinating cone-shaped contraption!
1YUM do you know if the cone shape structure makes the food cook any differently? I like Moroccan food and wonder if I should get one of those things or just keep using a pan with a lid.
2The cone shape causes the steam to reach the top and drip back down, sort of a self-basting/convection system. This way there's no need to open, stir or turn the tagine. If you make them all the time, you might want to get one, but you can get great (if not practically similar) results in a dutch oven, or heavy duty pan with lid.
3Best dish on earth!! If you have a chance to go to Morocco, you definetely have a tagine there!! It's very worthy!!!
4my mom jsut got a tagine! it is awesome & came w/ some really really good recipes...
