Grated tofu makes an excellent topping to vegetarian pizza. Instead of a typical tomato sauce, in this recipe, the pizza crust is covered with a thick layer of teriyaki sauce.
Peppers and mozzarella cheese complement the tofu topping. Garnished with bean sprouts and green onions, this pizza is fragrant, flavorful, and fabulous.

Ingredients
1 prebaked pizza crust (12-inch diameter)
1/3 cup thick teriyaki sauce
1 1/3 cups coarsely grated firm tofu
2/3 cup canned pineapple tidbits, drained
1 medium green or red pepper, sliced
3/4 cup grated mozzarella cheese
1 cup fresh bean sprouts
2 tablespoons thinly sliced green onion
Directions
- Place pizza crust on greased 12-inch pizza pan. Spread teriyaki sauce on crust, leaving 1/2-inch edge.
- Scatter next 3 ingredients over sauce.
- Sprinkle with cheese. Bake on center rack in 475°F oven for about 10 minutes until cheese is melted and golden.
- Top with bean sprouts and onion.
Serves 2.

This definitely sounds interesting, and looks great. I've never tried tofu.
1Wow! This sounds great. I've somehow never thought to grate tofu. I'll definitely be trying this with vegan mozza.
2Sorry Yum, I eat a lot of tofu, and I would never just grate it plain on a pizza like this recipe calls for. Sounds like a way to really turn people off from tofu.
What I might try doing if I wanted to try tofu on pizza is to slice the tofu in thin squares (like pepperoni), marinate in a salty seasoning and fry, then put on top. Then it would add to the pizza experience at least texture-wise, instead of just sitting there like a flavorless mushy bump on a log.
3How the hell do you grate tofu? Wouldn't even the firmest just turn to mush?

8forget the tofu! it's the teriyaki I'd never use on pizza. i'm finding a bunch of recipes worth trying on here, but I'm going to pass on this one. =/
