We've all been in crazy situations, and I want to know how you handle entertaining fiascoes and bad restaurant behavior. I'll present a situation and you tell me what you would do. Here's this week's scenario:
You're the renowned chef and owner of a super popular restaurant in a big city. An important food critic is sitting at a table tonight with his friends. When his order is about to be sent out you realize one of the dishes is completely wrong. What would you do?

Since I would not want to send out an incomplete order to such a significant customer, I would ask the line cooks to remake the entire order. Knowing this takes time, I would quickly throw together an amuse-bouche or appetizer. I would ask my best waiter to send it out to the table and tell them the food was compliments of the chef. The critic would never know there was a crisis in the kitchen.

Hmmm I didn't think it would look that bad not to send everything at the same time. That's a pretty clever way of covering the mistake, but in any case I feel it's always better even to say you had to remake a dish than send a wrong/bad one to the table!
1I would think food critics would know these things already. What if they don't want and appetizer and want to move on directly to the awaited dish?
2There's no way you send out a mangled dish to any customer, critic or otherwise. If it takes time to replace, then so be it. Better to have someone say a superb dish took longer than expected than to say a bad dish came out quickly and efficiently. I like your suggestion of filling the time void by sending out a delicious and complementary amuse.
3I HATE it when the cooks only give me part of my order to serve to a table...bad form. So right on for not sending it out!
4Good save! I think that I might also throw in a spot of wine for them to wash it down. A little "happy juice" and veiled, creative ass-kissery can work wonders!
5Just means extra work for me later.
