The first dish Keller made — they try to film five each day — was a salmon choucroute. It was a delicate piece of salmon crusted with sauerkraut. I can also faithfully tell you that it was, for lack of better words, delicious.

I would never think to combine salmon and sauerkraut but that sounds delicious.
