Ever since I received a copy of Grilled Pizza and Piadinas by Craig Priebe, I've been dreaming about grilled pizza. Last weekend, a friend of mine was over, and we grilled up some pies. They were sort of lopsided and awkwardly shaped, but delicious nonetheless. My friend was amazed by his, he'd never heard of grilled pizza before, and thought it was such a fun novelty. What do you think?

I've never had it before - but I have been seeing lots of recipes and really want to try it out!
1Never had it but would definitely try it.
2it's a summer staple. making your own dough is super easy and the favor/topping combinations are endless. i'm inventing something new each week after a quick visit to my co-op.
3I was at a friend's house last week and we tried it, super delicious! We toasted both sides of the dough then topped the dough, while it was still on the grill. I thought it might be easier to take the dough off the grill to top it next time, since this method was hot, we had to work super fast and we ended up losing cheese in the fire! What is the best method you guys have found?

9We've been doing this for a few years now. It's a great summer meal when you don't want to heat up your house. The trick is to top it just after flipping, then close the lid and pray for melting cheese. It's a little hot, but again - no oven! I have a recipe for a winter pizza with squash, but we always just make it with leftover bbq chicken, bbq sauce, mozzarella, red onions, and cilantro. This year, my goal is to try and make it with homemade dough, instead of the pre-made balls from Trader Joe's.

12Being that I used to own my own pizza shop, I love new pizza ideas. This is very interesting, I will have to try it.
We used to make a number of different dishes using pizza dough that I think would work great grilled as well. For example, take a pizza dough and toss it. Then cook it half way on the grill. Add meat and cheeses to the half of the grilled side and put it back on the grill. Once second side has cooked, add lettuce or whatever you like on a sandwich. Fold in half and eat! We called them "Wedges". Very Good!

You could also grill the dough and use as flat breads... i've been eating mine with tandoori chicken and the cumin-scented carrot raita Yum posted a few days ago.

22I'm highly allergic to cheese, but wish I could try this. Grilling always adds that extra flavor to everything and it would go GREAT with pizza!

You can use your own dough, store bought or even pre-made flatbreads. Just be sure to spray the grill with the non-stick spray for grilling before heating and brush the side of the dough/breads with olive oil before putting the underside on the hot grill so there is no sticking. I like to use small, individual-sized crusts. They are easier to manage and each person can individualize.
We have lots of toppings on hand, and, each person chooses a plate of toppings and when the dough has been flipped, you can either take them off and top later, or top them right on the grill.
26Some great combos - Fresh mozzarella,fresh tomato slices, sundried tomatoes, carmelized onions, goat cheese, fig jam, prosciutto...The possibilities are endless. Just have fun and be sure to have some tasty sangria or cold beer to accompany your creations!

34The first time I did this was a huge fiasco. My husband ended up dumping it upside down on the FLOOR on the way back to the kitchen. The dog thought it was really yummy though.

37SO good. Pizza dough is easy to make, or you can just buy it premade. I know Sunflower Markets has it (for $2).
