
This is a rare Would You Eat This wherein I first heard about meatloaf cupcakes, I thought they sounded gross. Then later, after finding this photo I decided they looked delicious!
The "icing" is made of mashed potatoes, and the pink coloring comes from beetroot. Are you loving these as much as I am?

This makes me laugh to no end. My friends and I made meatloaf cupcakes for our friend's brithday as a joke. He gave up sweets for lent, so we hoped these would suffice. But some people are taking these seriously, or so it seems!

13I made a full-blown 3-tiered meatcake last Thanksgiving for a potluck party (yes, frosted in mashed potato, with an inter-layering of bbq sauce). It was a SMASH hit, and has become something of a calling card for me.
14LOL I saw this when I was 'stumbling' a while ago. I think they look so good. I doubt I would want to eat them with my hands, like a real cupcake, though.
it helps that meatloaf and mashed potatoes are some of my favorite foods.

19I make meatloaf cupcakes all the time with ground turkey- though I do not add the "icing". My girls love them - my 5 year old calls them "meatcups".

37I have made these, too. I used a combo of turkey and oatmeal to make them a little healthier, with some blue cheese in the potatoes to give them some bite. I'll look for shoney's post to add more.

40The reject some of you have towards this is how I feel about taco salads, tamale pies (which actually should be written 'tamal pie' if even) and any other mexican food alteration specially the ones that involve cumin...who came up with the idea that something to be called mexican has to have cumin?? anyway...

43I love this idea. I live by myself and hate to do a meatloaf in a pan and have to clean it up and throw out what I don't eat. I am halving the recipe and making cupcakes. This makes a neat meat and potato dish and not so messy! Alto I have to have a side order of mashed potatoes, just icing is not enough. I love the cake icing deal with BBQ sauce this will make a neat dish to take to church suppers. Thanks for the ideas.

47aside from the i'm a vegetarian comment that you all knew was coming - i think that i would have to pass on that. there's just something wrong with the concept of meatloaf w/ icing in the form of a cupcake.

49the best part of the meatloaf is the part that gets all crusty and yummy next to the pan, so these would be extra yummy.
