At the Aspen Classic, PartySugar and I came across Inniskillin, an ice wine maker from Canada. Their Sparkling Ice Wine was unbelievably delicious and a true dessert wine treat. Although it has a rather high price point, around $70 for a 375ml bottle, ice wines cost more than regular dessert wines because they're produced from grapes that have been frozen on the vine. The labor-intensive technique results in a sweeter, very concentrated wine.
The sparkling varietal from Inniskillin has a light hint of apricot and caramel. The tiny bubbles brighten the body, making it less syrupy. It would pair well with fruits, poundcake, or blue cheese, but it's tasty enough to sip on its own.
The folks at Inniskillin call their sparkling ice wine "liquid gold," and I've got to say, they're not far off. Have you ever tried ice wine? What did you think of it?

It definitely sounds like something I would like to try. But unfortunately it also sounds like something I'll have to wait for someone to buy me since that's way out of my budget.
1I'm a huge fan of ice wine. I'm kind of craving some now...
2It's splendid. My friend had a bottle that she shared with me. I didn't know it was more expensive,though -- I'm not sure I would buy it for myself.
3Ice wine is loverly! Some great ones out of Canada. Reds are the best, but hard hard hard to find.
4I've never had ice wine. On dessert drink menus, I tend to gravitate toward port, but the positive reviews people have been posting are certainly piquing my interest.

9I LOVE Ice Wine. We buy some at the duty-free in airports every time we go to Canada!! It is THE best place for it. I remember a few years ago that the VQOA (the governing wine body in ONtario) went to court with Japanese "ice wine" makers as they were selling "ice wine" at a crazy cheap price yet it wasn't real.
Ice wine is so expensive because of how delicate and unpredictable it is to produce.
It is totally worth it, though!!!!!
Here in France, a bottle of Canadian ice wine is SUPER expensive...I'd give anything to only pay $70 for it! LOL
10My fiance and I love ice wine. We're not big wine drinkers, but heard about ice wine on NPR and were intrigued. I would love to try the Inniskillin, but it's probably not available around here. I actually have a hard time finding ice wine close to home, living in the suburbs of Philadelphia means there's not many people willing to pay more money for less wine.

12OMG people... I LOVE Icewines. And I had my wedding in Niagara-On-The-Lake, Ontario... We had some icewine there.
Icewine is delicious. If you are a "foodie" or "winey", I highly recommend a vacation to Niagara-On-the-Lake. You can bike ride from vineyard to vinyard in the region... Doing tastings.
13I have been dying to try ice wine. This one sounds delicious: apricot and caramel! Yum!
14I've had this and it's wonderful. Not something you'd drink every day but a nice change. The wine country of British Columbia does this to perfection.
15I would love to try it! I bet it would be perfect for a romantic special occasion. My husband and I just celebrated our 1 year anniversary and that would have been a nice touch we wouldn't have minded splurging on.
16I find them a little too sweet but I do enjoy it. Especially when reduced down in a syrup and poured over crepes with fruit and ice cream! YUM! My favorite treat at the Grape and Wine Festival in Ontario!
17I LOVE ice wine! Its like supe sweet and so grapey and just delicious. I just bought some, in fact. And some meade... and some tokaji aszu... and sake... and veuve. Uh, well I look like and alkie but I went to an awesome store that I only go to like every six months and I stocked up for all contingincies! Yeah, but ice wine IS DEF LIQUID GOLD... MMMM.
18I've been fortunate enough to taste all 4 of inniskillin's Ice Wines at a wine tasting. It is an unbelievable experience to indulge in these special wines. I'd have to say that the sparkling wine is the best, closely followed by the Aged wine.
