I've only been to two in my life, but I've found that Food Network has disillusioned me. The whole time when I was in the back row thinking about how I wanted to be all up in the chef's face
and close to the food.
I went to an all day demo where chefs from the best restaurants in my little town showed how to make some of their best dishes. It was awesome and there were many samples.

2I'd rather take a cooking class.
3I saw Guy Fieri at Atlantic City and I got to meet him! He's cooler (and a lot slimmer) in person!
