Kale goes extremely well with beans and tomatoes, I would think that if you wanted a little more green to this dish, you could add half a head of it.
1Love the Kale idea. We can never get enough of them in our diet.
My recommendation would be a Côtes d Rhône... try a Gigondas.
2This sounds really good. Might try it next week with the eggplant I currently have.
3Mmmm this sounds delish! Thanks.
4Sadly, my girlfriend and I disagree on eggplant. I love it. She, alas, does not.
5WineUnleashed, I have taken a vow to abstain from alcohol all summer long. And I hadn't had any problems until you mentioned the Cotes du Rhone!!! My favorite!!!
6Abstain from wine??!!! WHY?
Just kidding. When I return from Italy in July I am going on a MAJOR diet which includes giving up my vino for ONE MONTH!!!
Cheers,

Too bad eggplants and I don't go well together.
8All hail the musical fruit.
9Sounds delicious. I'll probably try a different cheese in place of feta, like mozzarella or provolone.
10"Saucy beans" sounds like it could be a band. Probably some kind of singer-songwriter duet, angsty but not too much so. Maybe some blues or jazz influence too.
11Sounds awesome. I'll have to work on the husband to get him to try it though.
12I don't care for eggplants. Eggplants + Beans = definitely not something I will be making.
