My Plan for a Simple, Last Minute Brunch
The morning of the brunch toast the bagels and assemble the mini sandwiches. Fill the bagels to your liking.
For mine, I mixed cream cheese with fresh herbs and slathered it on one side of the bagel. Next I topped it with smoked salmon, red onion slices, capers, and the other bagel half.
