Ingredients
3/4 pound salmon fillet
2 tablespoons soy sauce
2 tablespoons sugar
1/4 cup mirin (rice wine) or dry sherry
1 teaspoon grated fresh ginger
1 teaspoon fresh lime juice
1 teaspoon wasabi
cooked rice for serving
Directions
- Cut the salmon crosswise into 1-inch strips.
- Combine the remaining ingredients in a bowl.
- Heat broiler. Arrange the salmon skin-side down in a broiling pan and brush with the sauce.
- Cook 2 minutes and brush again. Repeat until the salmon is just flaky, about 10 minutes total, serve with rice and leftover sauce.

2TidalWave, if you have a toaster oven, you can use the broil setting on it. If not, you can pan-sear the salmon and then cover while keeping the pan over medium heat. It should get the fish cooked, but you won't get the same kind of sweet glaze.
And ValenCina, if you grate ginger with a microplane into some cheesecloth, you can get ginger juice, which is great when mixed into cocktails, sodas, or iced tea, as well as pretty potent flavoring for food.
3My momma makes really good teriyaki salmon.
4She cuts the salmon like in this recipe, dredges it in flour, and then pan-cooks it. When it's almost done she adds the teriyaki sauce and turns off the heat (so the sugar in the sauce doesn't burn). Mmmm!
