Come Party With Me: Black and White Luau — Dessert

For our black and white luau, FabSugar has requested a special dessert. While marshmallows don't have anything to do with the luau part of the theme, they'll be black and white, and more importantly: bite sized and delicious! Homemade marshmallows are a marvelous treat that will impress guests. Once you make them, you'll never go back to purchasing their grocery-store counterpart. Instead of dipping the marshmallows in coconut, I plan to dip the squares in chocolate and roll them around in crushed oreos! Served plated with toothpicks they're the perfect party dessert. Homemade Marshmallows

Ingredients

3 packages unflavored gelatin
1 1/2 cups granulated sugar
1 cup light corn syrup
1/4 teaspoon kosher salt
1 tablespoon pure vanilla extract
Confectioners' sugar, for dusting

Directions

  1. Combine the gelatin and 1/2 cup of cold water in the bowl of an electric mixer fitted with the whisk attachment and allow to sit while you make the syrup.
  2. Meanwhile, combine the sugar, corn syrup, salt, and 1/2 cup water in a small saucepan and cook over medium heat until the sugar dissolves. Raise the heat to high and cook until the syrup reaches 240 degrees F on a candy thermometer. Remove from the heat.
  3. With the mixer on low speed, slowly pour the sugar syrup into the dissolved gelatin. Put the mixer on high speed and whip until the mixture is very thick, about 15 minutes. Add the vanilla and mix thoroughly.
  4. Spay a 8 by 12-inch nonmetal pan with cooking spray. Pour in the marshmallow batter and smooth the top of the mixture with damp hands.
  5. Allow to dry uncovered at room temperature overnight.
  6. Remove the marshmallows from the pan and cut into squares. Roll the sides of each piece carefully in confectioners' sugar. Store uncovered at room temperature.

Makes 20-40 marshmallows.

    Just to let you know marshmellows are super easy to make but when you are making them they dont smell too great. Also it takes longet than you think for them to rise so if you find urself with a soupy mess and wonder if they will ever becaome mallows YES they will!!!

    I like the idea but when you realize there is a cup of evil corn syrup, it makes you think twice about it.

    so good!! i just made this recipe and rolled it in graham crackers, then drizzled with chocolate!!TIP-- a wet knife helps with cutting.

    Can you do it with dark corn syrup? But they just won't be white maybe? I have dark corn syrup from making fondue.

    I've made this exact recipe a dozen times... they are the easiest things to make. And I make them with a hand mixer because I don't have a stand mixer.

    And Uptown Girl, you can use dark corn syrup, BUT, they won't look light and creamy if you use it.

    hey fab, i love marshamallows, but being a hawaiian-born gal, i must recommend haupia (hawaiian coconut pudding)...it is one of my favorite desserts from home. haupia is more firm in texture so you can cut it into little easy-to-serve squares. if you wanted to make a vegetarian/vegan accompaniment to the marshmallow squares (which contain gelatin), haupia is a great choice as it contains just coconut milk, cornstarch, and water! you can dress up haupia by putting some shredded coconut or nuts, like pistachios or macadamias or almonds, on top. it's a classic hawaiian dessert and awesome for summertime!

    i will make some of these marshmallows for my next camping trip!!

    Can I use regular salt instead of kosher? What is the difference?

    i'm with dameneko on this one Smiling haupia is so good, and very refreshing to boot. i've got my soon to be hawaiian hubby to thank for introducing me to this stuff...

    would still make marshmallows though. i've been seeing recipes everywhere lately, must be getting pretty popular!

    yay swedeybabe! i'm sure hawaiian fiance will make sure you get the good stuff, too.

    last year Whole Foods had this seasonal hawaiian food section. some of the items looked pretty good, but their haupia was an absolute travesty! it was so bad i complained to the manager. i wondered how many people, not knowing very much about hawaiian food, now had an awful impression of haupia because of Whole Foods. someone probably thought it was supposed to be like poi because it's a "pudding"...they didn't even cut it up into squares and it had no body and the texture was all wrong. it would have made my auntie cry!!

    i've been seeing cute little gourmet marshmallows in all the fancy food shops lately...now i wanna make my own, seeing how easy this recipe is!
