When it comes to bacon and jalapeno, I'm not terribly discriminating. I'm so crazy about both flavors that I can't imagine how any combination of these two foods could taste bad, which is why I love this recipe for bacon-wrapped jalapeno "thingies" that Wren posted in the Kitchen Goddess group. They're jalapenos, they're wrapped in bacon, and they're stuffed with cream cheese. Enough said. Might as well just call them "thingies."

I've been wanting to make these for awhile...today I did! They were extremely good and worth the 15 minute or so prep time.
Ingredients
Fresh jalapenos, 2-3 inches in size
Cream cheese (softened)
Thin, regular bacon, sliced into thirds
Directions
Cut jalapenos in half, length-wise. With a spoon, remove seeds and white membrane (the source of the heat; leave a little if you like things HOT).

Smear softened cream cheese into each jalapeno half.
wrap me up!
Wrap jalapeno with bacon piece (1/3 slice). Secure by sticking toothpick through the middle (at this point you can freeze them, uncooked, in a Ziploc bag for later use)
heat me up!
Bake on a pan with a rack (I used a cooling rack
and it worked great) in a 375-degree oven for 20-25 minutes. You don't want the bacon to shrink so much it starts to squeeze the jalapeno. If, after 20 minutes, the bacon doesn't look brown enough, just turn on the broiler for a couple of minutes to finish it off. These are best when the jalapeno still has a bit of a bite to it.

Serve immediately in you want 'em hot, or they're great at room temperature.

I love all kinds of stuffed jalapeno peppers. Great when cold and filled with cream cheese or pimiento cheese. Awesome when hot, grilled, and covered in bacon. Or stuffed with cheddar and batter-fried.

18HA HA - we make these ALL the time!!! Only we grill them and we add a little Rotel to the cream cheese!! They are SO SO yummy!!
19Yeah I make these, Jalapeno Poppers, all the time for every party! But I instead of stuffing it full of way too much cream cheese, I just put a rectangle of cheddar cheese in it - then wrap bacon around that. It has a much richer (and less fatty) taste.
I agree with YumSugar's warning above, I touched my eye after making these and thought the thing was on fire! I had to rinse my eye out with water and drench it in eye drops before it resumed it's normal feeling again.
20My mom had to make 5 trays of these things for 4th of July. That comes out to oh...600 or so peppers. They're like little pieces of bacon wrapped crack on a stick.

30Hubbin makes a Smoked Bacon Wrapped Jalapeno Popper. He cores them and squirts the cream cheese inside. Then he wraps the bacon around and secures with a toothpick and throws them on the smoker for a couple of hours. It is so worth the wait! Now I'm hungry.

32I have tried many of Pioneer Woman's recipes. They are tried and true. I haven't had one fail yet. All of them are crowd pleasers. I look forward to trying this one at a gathering.

34OChottie, if you have a Jack In The Box near you, they have jalapeno poppers with cheddar inside, that are fried. They're not homemade, but they're awesome. Especially with some of their house buttermilk sauce.
35A friend had these at a BBQ and they were great. Of course anything wrapped in bacon is pretty much a slam dunk. Try dates wrapped in bacon for a sweet/salty treat.
36I've been making these for years and they are always a hit. The only difference is that in my recipe I use pineapple cream cheese. It's SO good. It's a sweet, salty, spicy combo that people love.
37I grow lots of jalpenos and adding cilantro and garlic to the cream cheese is very yummy.

38I use boursin or herbed cream cheese and marinated flank steak, and then I grill them instead of cooking them in the oven. the smoky flavor is unbelievable...

40I make these but add mozzarella or monterey jack cheese to the cream cheese to help hold the cream cheese together. Yum yum!
41Sorry to burst any bubbles, but these are WAY BETTER with goat cheese wrapped in very thinly sliced bacon that any butcher (if you have one nearby, sorry grocery stores don't count) will cut for you.

43In Texas these are staples on the table. I like to buy the cream cheese with pineapple in it or buy jelly and try different ones mixed with the cheese. Raspberry chipotle is my fav! We even stuff them with cooked bacon and soft cooked eggs and throw them over the fire or grill...umm breakfast.
