Lately I've been really into quiche. Quiche can be filled with random odds and ends of ingredients, are quick to throw together, and make delicious leftovers. This quiche recipe caught my eye because it combines two elements I wouldn't normally pair together, curry and canned tuna, to create one delicious dish.

Ingredients
Pastry for 9 inch pie shell
1 cup cooked fusilli pasta (about 2/3 cup uncooked)
1 cup grated zucchini (with peel), squeezed dry
1 (6 ounce) can of flaked white tuna in water, drained
1/2 cup grated mozzarella cheese
1/2 cup grated medium Cheddar cheese
3 large eggs
1 tablespoon all-purpose flour
1 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups skim evaporated milk
1-2 tomatoes, sliced 1/4 inch thick
Directions
- Roll out pastry on lightly floured surface to 1/8 inch thickness. Line 9 inch pie plate. Trim and crimp decorative edge.
- Scatter next 5 ingredients in pie shell. Set aside.
- Beat next 5 ingredients in medium bowl until smooth.
- Add evaporated milk. Stir. Pour into pie shell.
- Top with tomato slices. Bake on bottom rack in 350°F (175°C) oven for 60 to 65 minutes until knife inserted in centre comes out clean. Let stand for 10 minutes.

*Sigh* I love curry and quiche, so this recipe is perfect.
1Sadly though, I'm highly allergic to curry. Last time I ate it, I was sick for three days. But that was the best dinner I had in a long time! lol
I love quiches too. If you're only cooking for one or two, you have several dinners or lunches ready to go after cooking once... or, if you're feeding guests, it's easy to feed a whole bunch of people with one quiche, and people can take a big slice or a little slice depending on their appetite. Quiche + salad = yummmm!
2I usually use fat free half and half for quiche. Does skim milk work just as well?

4i LOVE quiche - i never used to have it but once i realized that it's just eggs with good stuff - i got more and more into it. my mom always makes me broccoli or spinach quiche and i like the way that the one in the picture looks with the tomato on top - but since i don't eat fish - the tuna would have to go.

6I love quiche, but I'll have to say hell no to curried tuna. My work's cafeteria keeps trying to foist curried tuna chowder on us and it tastes utterly disgusting.
7OMG! So I was just scrolling around YumSugar after reading about the Election Night Bash when I found this most excellent recipe. I looooove quiche, and make it at least once a week, but I've gotten a little bored with my recipe. And then tonight, I was searching online for Tuna recipes because I was in the mood for Tuna. And then I found this recipe. It's toooo good to be true. Tuna/Quiche/Curry are probably my most basic food groups! I can't wait! I'll tell you how it turns out! (Not to mention I randomly have all of the necessary ingredients at home already... including evaporated milk) Too good to be true!
