When a friend moves away, it's nice to let them know how much they'll be missed by hosting a bon voyage fiesta. Keep the theme of the menu — comforting food native to the honoree's new hometown — going with the dessert. Since Kara is moving to Boston, I'll be making this variation of Boston creme pie. Ingredients
1 1/4 cups cold whole milk
1 (3.4-ounce) box vanilla instant pudding and pie filling mix
1 tablespoon pure vanilla extract
12 pre-made cupcakes baked from a cake mix
1 cup heavy cream
1 (12-ounce) package semisweet chocolate morsels
1/4 cup powdered sugar, sifted
Directions
- Combine milk, instant pudding mix, and vanilla extract in a large bowl. Beat mixture with a hand mixer for 2 minutes, or until it thickens.
- Place mixture in refrigerator for 15 minutes. Spoon filling into a pastry bag fitted with a medium-size plain tip.
- Fill cupcakes with vanilla pudding filling by inserting tip into top of cupcake and squeezing a couple of tablespoons of filling into each cupcake.
- Heat cream in a small heavy saucepan over medium heat until bubbles appear around the edges. Remove from heat, add chocolate morsels to pan, and whisk until smooth. Spoon or drizzle glaze over cupcakes, or dunk the tops into the glaze.
- Refrigerate until set, at least 1 hour, before serving. Sprinkle with powdered sugar.
Makes 12 cupcakes.

3I made these a few weeks back for a bake sale at work. They sold out in minutes! I actually used 1 box vanilla and 1 box yellow cake mix (I was making a LOT of cupcakes). I fell in love with cupcakes with filling there after. Chocolate piped with peanut butter, white with strawberry mascarpone...you can make so many things this way!
4I made this Semi-Homemade recipe for my sister-in-law's birthday bbq a few weeks ago and they were definitely a hit! Plus they were pretty simple to make.
5those look GREAT! i've made the more traditional form of these creme pies - but never in the cupcake form. i think that i'll have to try this though. it could be a great thing to bring to a dinner or a party that's not your traditional dessert.

I was strolling through Quincy Market in Boston a year or so ago when I came across a charity -I believe it was the Red Cross- giving out pieces of Boston Creme Pie. They'd apparently made a Guinness Book of World Records-type giant Boston Creme Pie and then were giving pieces of it away to passers-by. Yum! I felt so lucky
7I made these for a coworker's birthday because they are her favorite treat. Wowzer, the cupcakes were history in about 10 minutes.
This recipe is substantially easier than the recipe I used. This recipe is now a keeper in my
recipe file.

11Yum, so you can just pipe the custard in the cupcakes? A friend of mind did something similar, but he cut the "top" of the cupcake and essentially cored the cupcake b/c he thought if he just piped it in, the custard would have no where to go. Will piping it directly in damage the cupcake (i.e. make it super soggy?) Thanks~
