Not an Emeril fan, but that's a fine egg!
1oh WOW - I just checked out that David Lebovitz site and... WOW. The ice cream looks delicious! I'm definitely going to try out that recipe SOON although I do admit that I would really want to see (or rather TASTE) the Pear Caramel Ice Cream.
