
Like asparagus, artichoke is a vegetable that is best eaten fresh and alone during springtime. Sure canned artichokes are one of my pantry staples, but there is nothing like pulling the petals off of a warmed artichoke and scraping the flesh off into your mouth. This flower like veggie is an ideal side with grilled meats and roasted poultry. Artichokes With Basil Mayonnaise
From Bon Appetit magazine
1 cup mayonnaise
1/4 cup chopped fresh basil
1 tablespoon fresh lemon juice
1 garlic clove, minced
6 10-ounce artichokes, tips of leaves trimmed
- Mix first 4 ingredients in medium bowl. Season with salt and pepper.
- Cook artichokes, covered, in large pot of boiling salted water until tender when pierced with knife, about 45 minutes.
- Drain well. (Basil mayonnaise and artichokes can be prepared 1 day ahead. Cover separately and refrigerate.)
- Serve artichokes warm, at room temperature or chilled with basil mayonnaise.

6Jendudley if you want to try artichokes without the hassle of making them, Cheesecake Factory has them seasonally served with a garlic aeoli (sp?) and I could eat those all day long!

8i seriously love eating artichokes with some creamy based dip.....SOOO GOOD! you can also try the green goddess recipe, that has some anchovies in it and sour cream. but yeah, too bad the store is selling ONE big artichoke for 6.99..craziness! when's artichoke season anyways?

10haze1nut - wow that's pricey! artichoke season is actually now. they peak in the spring - march/april/may - but continue to be harvested throughout the summer. perhaps they're just not ready yet in your area.

13Hmm, I'm not exactly sure what you could use as a substitue for the mayo. Maybe a mixture of sour cream and yougert? If you are worried about the calories I suggest making homemade mayo-the ingredients are simply eggs and olive oil so if you think about it that way it's not that gross.
14I don't know what it is about mayo - but to me, it has a bitter taste. I'm not a fan of it. But the mixture you suggested does sound like it could work. I'll give it a try. It's a bit bizarre but I also heard of using Miracle Whip to substitute for mayo??

15my family has this sauce that we use for artichokes. It's mayo, mustard (I like to use Dijon, it gives it more kick), and an all spice called Accent. That's it and it doesn't taste incredibly mayo-y. Maybe try that.
