Last night we got a double dosage of Kitchen Nightmares. First Gordon Ramsay fixed up Trobiano's and afterward he headed to the Black Pearl. My favorite part was when Ramsay taught the chef and owners of Trobiano's how to make homemade mozzarella. I started thinking and realized I've never made cheese! How about you?

3i haven't personally made it, but we toured a parmasean factory in parma, italy and my friend was helping them stir the vats...the best part was the huge storage facility for all the wheels...its unreal

10I've done it - it's really simple (and tasty!) to make your own ricotta at home, and we've also made plenty of paneer-like cheese (bland, white, semi-soft). Next on our list is mozzarella.
11yes! I have made paneer a couple of times...it's really easy, and tasty! Haven't tried my hand at anything harder, but I'd love to since I have a passion for cheese

13Closest I came was homemade Greek-style yoghurt. I wish I knew how to make halloumi, I just adore it grilled in salads!

15I've made ricotta. It's was really easy (recipe from Mark Bittman's How to Cook Everything Vegetarian) and took really no time. I really want to make mozzarella - that would be amazing.
