Now that Summer's winding down and Fall is officially here, I'll be featuring a new series called Sunday Slow Cooker, with a set of easy-to-make one-pot recipes.
Today's hearty recipe calls for sweet potatoes and slow-cooked chicken thighs that'll be falling-off-the-bone tender by the time you return to the crockpot hours later. Alternatively, you can opt for thighs that have already been de-boned, or even boneless, skinless chicken breast. To get this Fall recipe, read more.

Ingredients
6 bone-in chicken thighs, trimmed of skin and fat
2 pounds sweet potatoes, peeled and cut into spears
1/2 pound white button mushrooms, thinly sliced
6 large shallots, peeled and halved
4 cloves garlic, peeled
1 cup dry white wine
2 teaspoons chopped fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1 1/2 tablespoons white wine vinegar
Directions
- Place chicken, sweet potatoes, mushrooms, shallots, garlic, wine, rosemary, salt and pepper in a 6-quart slow cooker; stir to combine.
- Put the lid on and cook on low until the potatoes are tender, about 5 hours.
- Before serving, remove bones from the chicken, if desired, and stir in vinegar.
Serves 6.

1Yum! For my husband I would probably have to substitute red skinned potatoes for the sweet variety, however. He's never been a big fan of sweet potatoes.

4this really is great for a day like today in NYC since it's chilly and rainy and stew is a wonderful way to end the day. i just need to figure out what i can put in this to make it robust without using chicken...since that's something that i won't eat. maybe i'll find a few more veggies that i can put in there that will keep form.
5I used to make a similar recipe -- using turkey fillets, sweet potatoes, and green beans. Now I'll have to go find the recipe! Funny enough, I'm making garlic pork roast in the crock pot today.

9oo, i'm looking forward to this series of recipes. i'm actually in the market for buying a crock pot, i've never had one but have seen a lot of very good recipes for the use of one, and i like the idea of having something waiting for me to be eaten when i get home. so my question is, what should i look for in a good but reasonably priced crock pot?
10do you think i could use boneless skinless chicken breasts instead of the thighs? i only have the breasts in my fridge and don't want to make a special trip for thighs.

chillygracey — I'm not sure what recipes are good for cardiac patients, but we try to good-for-you recipes with the tag "healthy." You can also find great recipes at fitsugar.
ilanac13 — I would suggest turning it vegetarian with more vegetables instead of the chicken thighs. You can try carrots, turnips, parsnips, rutabagas, and other Fall root vegetables, as well as other mushroom varieties, like portobellos and shiitakes.

13Oh I tried this last night! BUT instead of using my crockpot I baked it with the boneless skinless chicken breasts. I forgot to put everything into my crockpot before I went to work but still wanted to try it so I just baked it for 50 minutes. Came out really good! I elimianated the vinegar and substituted the shallots (mine had mold or something on them!) with red onion. Super tasty.
