The Amazing Rice: Cilantro-Lime Rice

In many cases, white rice is served alongside a saucy dish. When this happens, the rice is normally overlooked. However, white rice doesn't have to be boring, it can be delicious! Especially if you jazz it up with a simple stir-in of cilantro and lime juice. This recipe is incredibly easy — almost as uncomplicated as making white rice. Cilantro, garlic, and lime juice is blended with olive oil before being mixed into the cooked rice. If you don't like cilantro, get creative, white rice would be divine with a basil-lemon or parsley-orange oil folded in. To learn the technique, read more.

Cilantro-Lime Rice

Cilantro-Lime Rice

Ingredients

1 cup long-grain white rice
Coarse salt
1/2 cup fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon olive oil
1 garlic clove

Directions

  1. In a medium saucepan, bring 1 1/2 cups water to a boil.
  2. Add rice and 1/4 teaspoon salt; cover, and reduce to a simmer. Cook until water is absorbed and rice is just tender, 16 to 18 minutes.
  3. Meanwhile, in a blender*, combine cilantro, lime juice, oil, garlic, and 2 tablespoons water; blend until smooth. Stir into cooked rice, and fluff with a fork.

Serves 4.

*I used a food processor instead of a blender.

    I love the cilantro-lime rice they have at Chipotle so I am def. gonna give this a try Smiling

    I made a rice like this just the other day. With Cilantro, garlic, onion, salt and pepper. It was soooo good and flavorful.

    I make something similar too when i make steamed fish (with thai or other asian flavors). Another good side rice (if you dont want to change the white color) is coconut rice.

    Oooh, I've made this rice a bunch of times! In fact, you'll see my comment under the recipe on the Martha Stewart page recommending a food processor over a blender. The blender TOTALLY didn't work for this recipe. It still tasted delicious, but part of the fun is how the rice turns bright green! I could eat giant bowlfuls of this rice, it is DELICIOUS!!!

    that looks great, but what do you eat it with? plain? or a yogurt sauce? my hubby needs meat with every dish lol.. what to do?

    I'm gonna add cooked, diced chicken and micro-sliced green beans to make it a whole meal. I'm all about the one-pot meals!

    i love this! just tonight while my fiance and i are in mexico on vacation, he was telling me how much he LOVED lime and cilantro and here you are posting about a dish that i could easily make that would have both ingredients in it. this is perfect timing and i'm definitely going to try it out when i get home!
