Cube the butter.
For pie crust, use a combination of butter and shortening. Shortening makes the dough flaky; butter adds rich flavor.
Prior to making the dough, cut any butter or shortening called for in the recipe into small cubes no larger than 3/4-inch in size. This will incorporate the fat into the flour mixture without causing the butter and shortening to melt.
