Chill the butter — again.
After cubing fat, transfer the butter and shortening to a bowl, and return to the freezer for at least 15 minutes. In a hot oven, cold butter and shortening will turn to steam, which creates flakiness in the dough.
For best overall results, everything should be ice-cold: Use ice-cold water, butter, shortening, knives, and bowls.
