According to New York blog Gothamist, Williamsburg newcomer and butcher shop Marlow and Daughters is testing out this rabbit sausage just in time for the holidays. "It's an interesting thing and I'm kind of proud of it, especially because it was a big pain in the ass," said butcher Tom Mylan. "Deboning rabbits is very tedious. It's like deboning kittens."
To make the sausage, Mylan uses the belly, shoulder, and loin of the rabbits, which come from Quebec. He grinds them with cured pork belly, and whips in aromatics and cream-soaked bread. What do you think? Are you interested in trying this special sausage?

I would eat it, I love rabbit meat.
1I grew up on a farm in the South and we hunted and I have had rabbit sausage, rabbit meat, and rabbit stew before. Been there and done that.
2I would never eat anything made with rabbit meat, I love rabbits.
3I've eaten rabbit stew before. Of course someone told me after the fact... that would probably have to be the case here.
4I love rabbit meat! Especially in a delicate rosemary, mustard and cream sauce but sausage is fine too.

11Per the Chinese zodiac, my mother and younger brother were born in the year of the rabbit. While that certainly hasn't stopped me from eating lamb, or my other brother from eating chicken, or my father from eating pork, somehow we've managed to draw the line at rabbit.

17It sounds delicious, although the "kittens" comment really grossed me. (No, I would not eat kittens.) My husband is a farm boy who grew up eating whatever his parents hunted or harvested, including the rabbits they raised for food. I was a city girl whose friends considered rabbit a gourmet dish. So, yes, I would at least try rabbit sausage.

I know cats are eaten in some places, but I think it's more likely that anyone would have deboned a rabbit than a kitten.
Aside from that, the picture of the sausage doesn't really look all that appetizing.

A lot of people keep rabbits as pets. Eating a rabbit would be seen in a similar way to eating the family cat or the family dog.
More importantly, businesses that raise or offer rabbits for food would be seen in the same light by many Americans as they see the Asians who offer dogs and cats for food, clothing etc. In other words, however irrational ( we eat cows, pigs, and chickens -- all smarter than dogs ), these people would be seen as villains!
FYI, FWIW google on the term "Rabbit Starvation". Rabbit meat is nutritionally inferior. It lacks an amino acid in its protein that human beings need.

Rabbits are the 3rd most popular pet...I have 3 of them, they are just as intelligent as cats and most dogs, eating dog or cat would be seen as disgusting, would YOU think that was okay? I bet NOT, well the thought of eating a rabbit is equally as disgusting to me... We don't live in a third world country so why do it there is really no excuse or reason. 34Anything, even human meat would taste sublime in rosemary, mustard sauce served with Chanti and fava beans. Isn't that what Hannibal said. Well its true. Human meat is consumed in many parts of New Guinea and other parts of the world. The descriptions of its flavor range from white meat pork to chicken. So, I do not buy that sublime sauce thing as a justification for killing very intelligent and loving animals like rabbits who also happen to have feelings and emotions just like ours. Cat, dogs and kittens are delicacies throughout Asia, the South Pacific, and in parts of South America and Mexico. Kitten meat is considered the tastiest of all meats; next is dog meat. Kitten, cat dog, and bear meat are considered aphrodiasiacs due to the powerful nature of these animals.
Knowing how intelligent, sweet, loving, devoted, and wonderful rabbits are I would never, eat rabbit meat no matter how good or how good the sauce. Rabbits have comforted me when I am sad. However, they can throw a curse. Ever read the Curse of the Weir Rabbit?
Ever hear of the Rabbit's Revenge. That is why most people will not eat them. Paybacks can come years later. So don't kill an innocent, sweet and helpless animal when people reject you or to feel powerful.
