In case you weren't aware, yesterday was National Tortilla Chip Day! (I was confused, since I thought every day is tortilla chip day.) It would be easy to honor these ever-popular snacks by serving them in nachos or with salsa, guacamole, and bean dip, but I wanted to look for something special and different. This totally made me crave a pork dish I used to make that is stuffed with crushed tortilla's, roasted corn, cheese and cilantro....now i'll have to go get ingredients to make it!

2These look great! I cannot tell you how long it has been since I have had a hot dog but that recipe might just bring me back to the dog. The scallop appetizer also looks great. I love Mexican food, can you tell?
