Masa & Masa Harina
Masa — literally "dough" in Spanish — is a cornmeal dough traditionally used in Latin cuisine. Unlike cornmeal, it's made of sun- or fire-dried corn kernels that have been cooked in a solution of lime or ash and water and then ground.
When dried again, the substance becomes masa harina, or "dough flour." Both are used to make tortillas, empanadas, tamales, among other dishes.

2Oh I love Maseca. My mom has been using that brand since before I was born!
3i remember learning about this on Bobby Flay's Throwdown. he was making something and he used Masa, and the competitor teased him about it.
4We were watching Rick Bayless the other night when he pulled out the Maseca and my MIL said that no self-respecting mexican cook used it unless they absolutely had to. She said it should made from scratch.
Who knows, as long as the end result tastes good who cares.
