Semi-Soft

Semi-soft cheese is excellent for melting. When squeezed between your index finger and thumb, a semi-soft cheese is pliable and squishy. Some semi-soft cheeses are havarti and Muenster. The cheese seen here was one of my favorites: a medium-aged gouda from the Winchester Cheese Company.
