Soft-Ripened
Because of the cultures, this type of cheese gets softer as it ages. It ages from the outside in and is typically very creamy. The most popular soft-ripened cheese is brie. While it's OK for these cheeses to age, when a soft-ripened cheese begins to omit an aroma of ammonia, throw it out.

mmm humboldt fog! so good!
1not a fan of the soft cheeses. . . tried the humboldt fog, and if i recall correctly it was too salty for my tastes.
