Blue
There are three categories of blue cheese: creamy, crumbly, and hard. Pork words are sometimes used to describe this cheese, which gets its blue veins from a mold that grows while it ages. The flavor of blue cheese is salty, buttery, musty, and yeasty.

stilton, and cambozola are quintessential blue cheeses.

Pork words? What are pork words? Bacony? Ham-ish? I've never heard these qualities attributed to a cheese.
