Store-bought chicken broth is a staple ingredient in my kitchen, but the other day when I went to make soup, I did a double take. I couldn't remember the last time I used chicken broth and the container was open. Although the expiration date said November 2009, I wasn't sure if the stock was still good. After doing some research, I learned that once a box of chicken broth is open, it should be kept in the refrigerator for no longer than a week. The date on the outside is for an unopened box. Homemade stock will last in the fridge for four days.
Freezing both homemade and store-bought chicken stock will extend its life for about 60 days.

1oof guess I need to throw mine away now.
2I don't go through it all that quickly (cooking for one and all), but after about 5 days, if it passes the sniff test and the quick-taste test, I still get it to a roiling boil before using.
3I didn't know this until Party informed me. Maybe it means I will need to start buying smaller boxes of chicken stock!

5I make stock when I’ve cooked something with chicken bones, but I can never use it in time. I know I’ve made something out of nothing so it’s not like I’m wasting it, but I hate throwing it away!

7I wish they made the boxes in a juice box size, or the cans in a half can size. Cooking for one, i rarely need more than 1/2 - 1 cup at a time. I'd pay the extra cost, because i waste so much of it by not using it.. Freezing it in ice cube trays is a good way to have small portions on hand.
8The brand Kitchen Basics makes them in juice-box size.
9This information is present on every container of stock and it has been there for quite some time. I guess I shouldn't have expected anything else, people hardly read the ingredients, what made me believe that they would read other things on the packing - although I had higher expectations from foodies....

13So this many people use the stock without knowing it is only "good for one week" and nobody seems to be getting sick. Is it really good for only a week? Or is this something that the manufacturers put on the box to get you to buy more stock?
