Between writing about the new marketing push for Kraft Singles and Bobby Flay offering sandwich-making tips, I've had grilled cheese on the brain. I'm a particularly huge fan of Hog Island's version, as well as Party's rendition with taleggio, escarole, and onion jam. Today, I'm making a variation based on ingredients I have on hand: sweet butter, aged gruyere, and artisan Pugliese bread. What's your perfect combination?

All I need is mozz, bacon, tomatoes and spinach. Yummmmmmerz
1Sliced sourdough with white cheddar!
2Fresh bread, gruyere cheese, spinich, mozzarella, and definitely bacon!
3Homemade Amish bread with butter, a couple of slices of good Wisconsin cheddar, a slice of tomato from the garden, and a few leaves of crispy Romaine lettuce. Oooh, yummmy!!
4All I need is sourdough, butter, and mozzarella. Sometimes cheddar too!

6The grown-up in me is currently favoring a broiled open-faced version on toasted baguette slices with a really good sharp cheddar cheese, caramelized onions with a shot or two of balsamic vinegar, and of course, crumbled bacon to top it off. But the kid in me will never turn down the classic version of the sandwich, made with Kraft "rubber cheese" slices and buttered white bread. This variety just screams to be dunked into a piping hot mug of tomato soup!
7A girlfriend of mine makes an AWESOME grilled cheese where she makes a compound butter with parmesan cheese and spreads it on the outside for when she cooks it in the skillet. Inside goes american, cheddar, swiss, and gruyere. It. Is. Heaven.

9I use colbyjack & cheddar on wheat bread with a few slices of ham. i also use olive oil instead of butter to cook it in the pan.
10Home-made sourdough bread. Inside: dijon for the bite. Grate sharp cheddar and toss it with a spinach chiffonade. Sprinkle with salt. Medium heat so it cooks slow in a cast iron skillet.
11Nothing terribly fancy but my favorite is potato or sourdough bread with plenty of whatever cheeses are in my fridge. Toast it in the toaster oven, grilled in the cast iron skillet or grilled in the Foreman grill, and it's sandwich time! Oh, and if there is a bit of ham or bacon with some mustard in the sandwich, so much the better.
12Just ate one of my two favorites! 12 grain bread with honey mustard, turkey, tomatoes and gruyere. The other is leftover slices of pork tenderloin, jalapeno cilantro sauce, red onion and herbed cream cheese on wheat berry bread.

14white bread, american cheese, and proscuitto. or when i was growing up my mom would make grilled cheese and put a little mayo in it... i remember it being surprisingly good.

Now, for my favorite grilled cheese. I love the tang and the crunch. Sheepherders bread (or any good white bread) sharp cheddar, herbed feta, chopped red onions and thinly sliced tomato. Add all ingredients in layers, and use a grill pan to make the bread nice and crispy. Yummy!

And then there's the kraft singles and wonder bread. You can't let go of that classic.

29My favorite is grilled cheddar cheese with apple slices on sourdough bread. Soooo good. But I usually make a good ol' grilled cheese sandwich with American cheese and tomato slices.

32laellavita and I share the exact same taste for a perfect grill cheese. I would also add a sprinkle of Olive Oil.

34When we first got married I thought my husband was crazy because he would put peanut butter on his grilled cheese sandwiches. He finally badgered me into trying it, and I had to admit it was quite tasty. Now I eat it that way about half the time.

36When I was on a remote island in the Grenadines, I had a really simple grilled cheese from the only hotel on the island. Sourdough, cheddar, swiss, and pineapple. HEAVENLY.

38I don't know about perfect grilled cheese, but last night the boyfriend made me one that was just regular white bread, and cheddar cheese with hunks of ham and jalapenos and it was AWESOME.
