6 Unusual Spring Vegetables
Kohlrabi
This cabbage relative has the texture and color of a broccoli stem, and a peppery quality, much like a radish. It's most tender when eaten young, and peaks in early Summer. Enjoy it raw in coleslaw, stir-fried with other vegetables, battered and fried tempura-style, or puréed in soup.
