Stinging Nettles
A wild green that grows only during a limited time in Spring, the stinging nettle has a woodsy, slightly bitter, spinach-like taste. Avoid stings from the leaves — which have hollow hairs with irritating chemicals — by wearing gloves or using tongs, and blanching nettles in heat.

1Yes -- so if you have some, you should take advantage of their limited season and great taste! You just have to take the sting out of them by blanching them.
