Triple-Mango Chicken
From Better Homes & Garden magazine
1 tablespoon olive oil
4 small skinless, boneless chicken breast halves
1 mango, seeded, peeled and cubed
1/2 cup mango-blend fruit drink
1/4 cup mango chutney
2 medium zucchini, thinly sliced lengthwise
- In very large skillet heat oil over medium-high heat; reduce to medium.
- Add chicken. Cook 6 minutes; turn.
- Add mango cubes, mango drink, and chutney. Cook 4 to 6 minutes or until chicken is no longer pink, stirring occasionally.
- Meanwhile, place zucchini and 1/4 cup water in microwave-safe 2 quart square dish. Cover with vented plastic wrap. Micro-cook on 100 percent power (high) 2 to 3 minutes, stirring once; drain.
- Place chicken on top zucchini. Season with salt and crushed red pepper.
Serves 4.
Substitution: Mango nectar, carrot juice, or orange juice may be substituted for the mango-blend drink.

i've never had mango. is it sweet? is it in season now? how do you cut it?
1Mangos are pretty diverse in the flavor spectrum. They are sweet, but they can be a bit tart and pine-y sometimes. I think theyre in season now...yeah, I would say they are available most places. And to cut them, I take a knife from end to end (kinda what it looks like when you have and almond), but make the incision a bit above the midline, since there is a very solid, oval pit in the center of the fruit.

6Mangos are in season during the summer usually from May unto September. You can substitute a mango jam or marmalade like crispet1 suggested or make your own mango chutney or buy it.

13I don't think mangoes taste anything like peaches nor would I say the texture is similar. I am from the Islands and I grew up eating them.
14I find a lot of times that the ones in the grocery stores do not have the best flavors. They taste the best when they rippen on the tree. However, they obviously aren't available everywhere in that form. Sometimes they have frozen cubed mangos in the section next to the strawberries, etc.
While I think you actually could do this with peaches with a few substitutions, I don't think the two fruits taste anything alike (nor do they have the same texture). I'm not a huge mango fan, it's sort of hit or miss for me but I do like peaches consistantly.
15Mango....well I dunno about the zucchini part, I'm still a kid that likes to cringe at paprikas and things like that so...but it sure does look tasty....
16lms - i agree, peaches don't taste like mangoes (although like susanec said, you could try a substitution) and the texture is definitely different. however, i think for someone who hasn't tried them before, i'd say they're more like a peach than other common fruits (apples, oranges, pears, bananas, etc.).
17okay! i just had one! it took me awhile to get into it but they aren't bad! are you supposed to eat the skin? it was kind of tough and nasty.

20oh okay! whew! i was afraid that if i left the skin i'd be wasting part of the fruit. i stopped eating the skin after two bites. yay for mangoes!
