Whether you're making a strawberry tart [1] or a sweet salsa [2], you'll probably want to "hull" the berries first. But what exactly does that mean?

Strictly speaking, hulling means removing the green leafy top of the strawberry. Or, you can go a step further and cut away the white flesh that surrounds the stem using the tip of a knife. Everything else — the center of the berry, the rounded top — is left intact. Some people lop off the entire top of the berry, but that isn't necessary and, in my opinion, wastes too much good fruit. You can use a strawberry huller [3] or just a small, sharp knife.
