Entertaining at home is one of my favorite activities of all time, but as with all hobbies, it requires lots of thinking ahead and decision-making, from planning a prep schedule to coordinating the menu. In this series, I'll present a dish and ask you to share what you'd serve alongside it.
Here's the scenario: You're having some old friends over this weekend to soak up the Summer sun over a laid-back lunch in your backyard. You know the star course for your meal will be a Cuban sandwich, made with roast pork, ham, provolone cheese, and pickles, and spread with a layer of mustard. What would you feed your guests to accompany it? See what I'd make when you read more.
I'd take my guests on a tropical-Latin staycation by placing a lemonade mojito in each of their hands. To start off the lunch, we'd enjoy a cilantro-dressed hearts of palm salad. I'd serve the sandwich next, alongside crispy plantain chips. The meal would end on a high note with coconut flan for dessert.
What would your menu include?

Pineapple
I'm a bit of a Simple Sue... I'd just go with Sunchips, fruit and lemonade!
1plantain chips and guacamole. yum.
2Creamy cole slaw and ice cold Coronas with lime wedges.
3hearts of palm = not my thing.
I'd do a cilantro-heavy coleslaw, lots of herbs and julienned veggies, keeping the flavors very light and fresh.
ice cream for dessert!
4mango mojitos, black bean and corn salad, green salad w/ marie's chipotle ranch( my new fav) and fruit salsa w/ cinnamon chips for dessert.
5I'd serve classic mojitos, a viniagrette-based coleslaw with lots of cilantro and lime juice, grilled corn with cotija cheese on top, and mango sorbet for dessert.
6tropical fruit white wine sangria (definitely including carambola) guarana sodas
7avocado salad
plantain and cassava chips with mango salsa
pastelitos (guayaba and cheese)
I'd serve mojitos, roasted cumin red potatoes, and grilled asparagus.
8That awesome corn and blackbean salad with cilantro that was on fitsugar last week. YummY!
9I think I'd make avacado and tomato salad with fried ripe plantains. For dessert Vanilla Ice cream with Dulce de Leche.
10The way that cheese goops out in that picture looks very unappetizing. I kind of looks like mucus...
Sorry. It's all I can really think about right now.
11Wunami, that's not cheese -- it's a pickle!
