I started off eating the skin on new potatoes in crawfish boils, moved onto eating them in mashed potatoes and potato salad. On my baked potatoes I will generally eat the skin if I spice up
the potato with paprika, onion and garlic powder, and red/white/black pepper. Yummy! Now I want potatoes tonight.
The skin is the best part of the potato! It's where all the nutrients are and it gives you a lot of fiber. Sometimes when I make twice-baked potatoes, I make some extra ones and I hollow them
out and eat just the hollowed-out skins...yummy!!
I thought I was alone in loving the skins. I bake my potatoes in the microwave and then finish them in a hot oven or under the broiler to crisp the skins. No one else in my family will eat
them so sometimes I find myself serving the kids scraped out baked potatoes and eating their potato skin as my dinner.

8Oh heck yes I do! I love the skin. And regular baked potatoes are great but I love baked sweet potatoes most of all!

10I didn't realize people don't eat the skin. I season it with my own seasoned salt mix and it is ohmygoodness delicious!
