Summer has to be my favorite season in terms of produce. Strawberries, cherries, tomatoes, corn... the list of delicious, ripe fruits and vegetables that can be attained locally at farmer's markets is virtually endless. I've just started to notice the first ears of fresh, crisp corn at the grocers. Corn is a type of grass that dates back over 5000 years. The average ear of corn is 12 to 14 inches in length and contains about 400 kernels arranged in 16 rows. Most of the United State's corn crop comes from corn that is planted in March-July in Iowa, Illinois, Nebraska, and Minnesota. The most common type is sweet corn that comes in yellow or white varieties. The kernel color has no affect on the sweetness of the corn.
When purchasing corn look for ears that have fresh, tight, bright green husks. Stay away from those that are yellowed and dried. If you can, peel back the husk a little to check out the ears which should be plump, bright, milky, and well rounded. The silk should not be brittle or brown but soft and moist with a light golden color. Eat your corn as soon as possible to enjoy maximum flavor, as it tastes best right after harvest (when the sugars are still retained). Keep in the fridge with the husks on until ready to consume.

Grilled corn is the best.
I just added some corn to my homemade burrito last night and it was awesome. That and the fresh cilantro of course!

4How timely! I was craving corn last night, and we roasted some in the oven. I'd never done that before and it was delicious.
5Corn is good, however it's not in season yet. Depending on the rain you see the farmers on the side of the road during late July and August. Anytime sooner and any Iowan can tell you it's bad corn!
I had a friend in school who wouldn't eat corn if it didn't come from her family's farm. What can I say, people in Iowa love their corn!
6blue sarah - the weather has been so weird this year. here in california a lot of things are showing up earlier than anticipated. I was suprised to find some amazing sweet white corn two weeks ago. I just hope it means that the season doesn't end early. I don't know what i'd do without corn at a hot august bbq!
7Blue Sarah, I was gonna say the same thing! Its not in season yet. Come July it'll be throwing itself off the produce racks.
Another thing about corn, is that you should ALWAYS ALWAYS ALWAYS open the corn when you're at the grocery store or produce stand BEFORE you buy it. Sometimes mites and bugs get in there, and you can't always judge the corn by the silk on the end. If you plan on grilling it inside the husk, then don't remove the husk, but if you're going to throw the husk away anyways, don't even take it home with you. Most groceries have a garbage bin right by the corn so you can shuck it before you buy it. Its a really good idea, especially if you're living in an area where corn is shipped in, and is more apt to be less fresh.
