I love the Hog Island Oyster Company - their oysters are delicious and their atmosphere spectacular. I'd love to recreate it all at home, but worry about handling, shucking and storing them. Hog Island's Hogwash

1/4 cup seasoned rice vinegar
1/4 cup unseasoned rice vinegar
1 large shallot, minced
1 large jalapeno chili, seeded and minced
Leaves from 1/2 bunch cilantro, finely chopped
Juice of 1 lime
3 dozen extra-small Pacific or small Eastern oysters on the half shell, served on a bed of crushed ice.
In a medium bowl, combine all the ingredients except for the oysters. Just before serving, stir the mixture to make sure you pick up all the goodies in the bowl. Top each oyster with a teaspoonful of the sauce. Serve immediately.
Note: Hogwash should be served on the day it's made.

1I've never had oysters!!
2You MUST try them. But not if you have texture issues... LOL.
3well i've eaten mussles and escargot. so would i like oysters? the sucking them out of the shell kind of turns me off. i don't know why lol
4if you've eaten mussels and escargot, oysters should be easier! I love them! and it's interesting there's two camps of folks, those that slurp and swallow and those that slurp and chew. The flavor is just so amazing, I actually switch between the two, I can't decide which I prefer.
5Me too, I always switch. I cant make up my mind!
And I think it would depend on you if you consider oysters likable, Lala. Mussels and escargot are cooked and chewier compared to a raw oyster that slithers down your throat. Thats the part that most people cant get over.
6I love oysters. Yum and I have a total weakness for Hog Island, we both go (together sometimes) at least once a month. They have an awesome happy hour...man now I want to go again on Thursday and I just went last week!
