She's already got the barbecue and its essential accoutrements entirely covered, so I've been racking my brain to come up with an appropriate contribution. I had no idea what that was going to be — until I had a lightbulb moment for the perfect pièce de résistance.Since I won't be spending the holiday with family, I figure I'll bring a bit of my family to the festivities. As a child, I hardly liked spicy food, but from the first time I watched my mother whip together this slightly cooling, slightly fiery cream dip, I was hooked. It's one part Southern, one part retro, and 10 parts addictive, whether served with Ruffles, saltines, or celery sticks. See the two-second recipe when you keep reading.

Ingredients
8 ounces cream cheese, softened
1/2 large tomato, diced
1 clove garlic, minced
1/3 onion, diced
1 tablespoon hot sauce, such as Frank's Red Hot, or more, to taste
1 tablespoon sweet paprika
Crinkle-cut potato chips, saltines, or vegetable sticks, for dipping
Directions
Combine all ingredients together, stirring until fully incorporated.
Makes 1 1/2 cups.

i'm a new cook...do we seed the tomatoes...or dice them whole...sounds delicious and can't wait to try!

I'm pretty sure you leave the tomatoes whole and then dice them. They'd let you know in the recipe if there was a need to seed them.
2Besides, it probably wouldn't make a terrible lot of a difference.
Good question -- I often use Romas, or a less seedy variety, but if you're cutting open and extra-juicy tomato, you might take the time to seed it, too, if it bothers you.
3i'd go with seeded otherwise it might be a little too juicy. i seed romas even when making salsa! and it turns out great.good luck!

5Good one Yum, I need lots of ways use up my huge tomato booty in my garden. I made the catsup you posted, curried catsup, tom sauce a gajillion ways, salsa, sundried tom pesto, pickled cherry toms, stuffed tomatoes and have given friends, neighbors and countrymen all I can.

8I made this but I put it on a burger and it was AWESOME. My husband and I ate the leftovers the next day with pita and it was still AWESOME.
