When I saw this recipe on the last page of October's Everyday Food magazine, I knew, instantly, that I had to make it. Reese's Pieces are my favorite Halloween candy and the thought of their crunchy shell and peanut butter filling in combination with brown-sugar blondies was too good to be true.
Unfortunately, the day I planned on making them, I couldn't find Reese's Pieces anywhere and didn't have time to run to another grocery store. Thus, I grabbed the next best thing: Reese's peanut butter cups. The resulting blondies weren't as festive as the original, but they sure were scrumptious! Ingredients
1 cup (2 sticks) unsalted butter, melted, plus more, room temperature, for pan
1 cup packed light-brown sugar
1/2 cup granulated sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract
2 cups all-purpose flour (spooned and leveled)
1 1/2 teaspoons coarse salt
1/4 cup each orange, yellow, and brown candy-coated chocolates (from a 12.6-ounce bag) or 8 Reese's peanut butter cups, removed from their wrappers and corasely chopped
Directions
- Preheat oven to 350. Brush an 8-inch square baking pan with butter; line pan with parchment paper, leaving a 2-inch overhang on two sides. Butter paper.
- In a large bowl, whisk together butter and sugars until smooth. Whisk in eggs and vanilla. Add flour and salt; stir just until moistened. Transfer batter to prepared pan and smooth top. Arrange candies or chopped peanut butter cups in 12 rows (2 rows per color, repeating once) on top of dough.
- Bake until top of cake is golden brown and a toothpick inserted in center comes out clean, 45 to 50 minutes. Set pan on a wire rack and let cool completely. Using parchment overhang, lift cake from pan and transfer to a cutting board; cut into 16 squares. To store, keep in an airtight container at room temperature, up to 2 days.

2Honestly, this is the worst day ever. Today is an early dismissal day for all of us, including teachers, which means that naturally, I get asked out to lunch by every co-worker within a few classrooms from me. Of course they want to go to my favorite diner where I would want to have the amazing, fattening, juicy burger and fries. Of course, since I don't want to get fatter, I don't go. So, what do I do? I go home, I make a healthy lunch, and I hop onto my favorite website -- all the sugar websites, basically. I come here to check out some delicious recipes and the works, and stumble upon this. Of course, I naturally want to bake some. Then, I will naturally want to eat the entire pan in a single night.
Basically, today is all about tempting me, and this, sadly has tempted me more than the burger, because I love Reese's. Thanks for this, really. My excuse when I give in will be because I wanted to make a treat for my boyfriend. I'll stick with that.

I'd love to try those but at almost $2 for 1 peanut butter cup ($4 for a small package) I won't. Homemade buckeyes might work though.

Question: Why butter the pan when you put parchment paper in on top of it? So the parchment paper comes out easily? Sorry, not that familiar with parchment paper usage.

16Oh you're evil Party. These look so good there's no way I'm going to be able to resist making them, then eating all of them. I ran out over my lunch break and bought some Reese's cups, and Heath Bars as well. I'm going to do half-and-half since my husband doesn't like peanut butter. Of course, he'll eat one and I'll eat the rest!

2. party -- your bars do look better than the originals!
3. finnlover (and others who don't want to or can't buy pb cups) -- you can make your own pb cups at home with three ingredients: peanut butter, powdered sugar, and chocolate chips/chunks. start by mixing the pb and powdered sugar together. at first, the mixture will be sticky. keep mixing until it gets un-sticky. you may have to keep adding powdered sugar until the consistency is right. then, shape the mixture into tsp-sized balls. melt the chocolate and dip the balls in one-by-one, put them on a foil-covered cookie sheet, and freeze them. there you go -- homemade (and probably healthier) pb cups.
I must make these and mail them immediately to my niece at University...these look like the perfect study break food, and PB cups are her absolute fave. Do you think these blondies will survive being mailed across country and still be fairly fresh, if I send them Priority?
