Happy Friday, and happy World Egg Day! This special occasion only comes around once a year, so I wanted to take the time to relish eggs and their multifaceted splendor. The incredible edible can be shirred, coddled, emulsified, or poached; used raw or cooked all the way through; eaten for breakfast or dinner; and presented in a salty or sweet manner.
From dessert soufflés to savory Scotch eggs, I've yet to meet an egg dish I don't like. But if I had to pick a favorite egg specialty, I think it would have to be smoked salmon eggs benedict, which comes with both poached eggs as well as a luscious, egg-laden hollandaise sauce, so I get a double dose of my favorite ingredient. What's your preferred egg dish?

I love love love eggs florentine. A diner by my house was featured on Food Network's Diners, Drive-Ins, and Dives and they have the best I've ever had. They mix the spinach with feta cheese and it's just perfection

soft boiled straight out of the shell with some sea salt, dill and pepper.

5I love eggs! I can't pick only one thing so here are a few of my favorite things:

- Spanish tortillas
- Pasta frittata
- BLT egg salad sandwich
- Huevos Rancheros
- Egg Foo Young
- Egg drop soup with corn
- Smørbrød with eggs, shrimps and mayo
I love eggs and have them every morning. When I make them I like over easy with buttered toast or scrambled with buttered toast. When I am out I love eggs benedict or a deli ham and lots of cheese omelet.
7Traditional Eggs Benedict or Deviled Eggs; it's a toss-up! I love Hollandaise Sauce and I love Paprika!
8Spanish style fried eggs -- fried in a good amount of evoo & with the yolk basted with the oil -- then topped with sea salt and a sprinkling of pimenton, served over an olive oil & garlic-rubbed crostini.

18My favorite brunch spot in SF makes amazing eggs benedict with proscuitto and grilled tomatoes. To die for.

20I like them scrambled with salsa on them. I also like them hardboiled on my salad.
21I will eat eggs pretty much any way you serve them - except soft boiled. I don't like runny whites. Honestly can't pick a favorite, but the way I eat them most often is soft scrambled on buttered toast, egg salad (on toast, open-faced, with sunflower seeds sprinkled on top), deviled eggs (I'm the official maker of them for all holidays), and Eggs Benedict is my favorite "going out" breakfast. So, so good.

Though not an egg dish, I adore having an easy over egg in my burger. A tradition from Australia, where I grew up, and damn, a good one at that.
